Ginger 

Part of the same family as turmeric & cardamon, which is resembled in it's hot spice, citrusy, woody taste.  The plants grounded flavour differs from the fresh, as it has more of an aromatic flavour, making it perfect for baking. 

Sand Ginger 

Typically referred to the aromatic ginger, differing in flavour to standard ginger.  Sand ginger is closely related into galangal, sharing similar flavours of sharp and citrusy tones.  

Usually used in Malaysian, Indonesian & Thai cuisines, the rhizome can be dried, sliced or pounded into a powder.

Thai Black Ginger

Holds a less pungent & milder taste in comparison to ginger. Tends to be less used in cooking, and more used within tea infusions and health supplements. The root is said to contain high antioxidants, boosting energy levels & enhance circulation.
